Gluten Free Rice Bread

We know that there are a lot of coeliacs (or just those who prefer not to eat gluten) who struggle to get a really great gluten free bread. If you’re looking for the best ever gluten free rice bread recipe, then the Waipoua Lodge Cooking School has the answer. Over the past three years Fran has developed this quick and simple recipe which she now shares in the hopes it will make a difference.

1/3 cup milk
2 big knobs of butter
2 eggs
1 tsp apple cider vinegar
4 tblsp oil
2 tblsp caster sugar
1 ½ tsp salt
1 ½ tsp xanthan gum (can be bought from healthstores)
2 ½ tsp dried yeast
2 1/3 cups of rice flour
1 loaf tin greased and lined with greaseproof paper which needs to finish approx 5 cms above the tin

Method

  1. Put water, milk and butter into microwave for about 1.5 minutes to warm and melt butter
  2. Put warm liquid into a large mixing bowl and add all the other ingredients EXCEPT flour and Xanthan Gum
  3. Using an electric hand mixer, mix well until totally combined
  4. Put in dry ingredients and mix well – it should now resemble and lovely thick sponge cake mixture with a dropping consistency
  5. Place mixture into prepared loaf tin
  6. Pre-heat the oven to 200C fanbake
  7. Leave to rise until the mixture is level with the top of the tin
  8. Bake in oven for approx 20-25 minutes
  9. Turn out onto wired rack to cool
